Crux Fermentation Project, Bend Oregon

Background

Founded by Larry Sidor, Dave Wilson and Paul Evers, Crux Fermentation Project opened its garage doors on June 30, 2012. After eight years with Deschutes Brewing, Larry and his friends decided it was time to open their own brewery. The facility was built in 1988 as Munnell & Sherill Mill Supply, an integral part of Bend’s history as a timber empire. In 1999, the building was converted to a transmission shop. In 2011, the trio found the building and began transformation into Crux Fermentation Project. They bought used equipment from friends in the brewing business. The bulk of their brewing equipment came from a defunct Japanese brewpub, arriving in pieces they had to reassemble, clean and polish, with the help of friends and family. Then, brewmaster Larry Sidor spent months beneath the brewdeck working with plumbers and welders.

A recent expansion on the property yielded a capacity of 240. They also have an expansive lawn area, where El Sancho sells tacos and Das Brat offers wursts from food carts.

Experience

One of our favorites in Bend serving a wonderful variety of craft brew.  Crux Fermentation Project-  how cool and appropriate is their name? It is a large place with hip and trendy vibe. Hop vines lined the entrance into the open pub with a great patio. The food was great!  Berry salad and mushroom goat cheese panini. The beer selection was one for varied tastes. We enjoyed the Impasse Saison, a couple of Belgium ales and the IPA.
