Background
John McIntosh and Dave Niemeyer owners/brewers opened Acopone Brewing in 2017. It is located in the historic heart of Dripping Springs on Mercer Street. The duo had run the Barber Shop, a wine and craft beer bar two doors down for about six years. The Barber Shop previously doubled as a brewpub, with one house beer on tap at a time. McIntosh and Niemeyer moved the brewing system into Acopone.
To differentiate Acopon from other area breweries, McIntosh and Niemeyer have focused on English-style ales like Homunculus, a dark mild; Gaspipes, an English bitter; and Pesta, an oatmeal stout. There’s also a rotating cask ale poured from a cask engine at a warmer temperature and a gentler level of carbonation.
Experience
We arrived at the historic Mercer Street on a rainy Thursday afternoon. The brewery is handicap accessible. We were greeted by a very friendly beer tender who discussed the nine beers offered that day. Acopone has a nice outdoor patio with several picnic style tables. Inside an L shaped bar and a few tables. There is a window through which you can see the brewing room. Acopone does not offer food onsite but one can bring in food. You can always run into The Barber Shop for a panini. The brewery is also dog friendly.
We got a flight of Homunculus, Festbier, Old Pounder and Norwegian Juice. We got a full pour of our favorites, Homunculus & Norwegian Juice.
The only nearby lodging noted is a Bed & Breakfast “Homestead” just down the street. When in the area also check out Jester King and Last Stand Brewing.
