Background-Black Project Brewing
James & Sarah Howat began production at Black Project Brewing, originally Former Future Brewing Company in January 2014. James, the head brewer, began experimenting with coolship ales and barrel aging. Utilizing a coolship captures microbes from the environment which in turn ferment the wort. In the early days they would pump boiling wort through a 75ft hose, from the brewhouse, out the back doors, up to the coolship on the roof. Soon they decided they need a larger vessel and created a 360gal copper tub that free-floats in a heavy duty stainless steel frame situated under a large window in the barrel cellar.
In 2016, Black Project Brewing expanded production with a 1,000 square feet addition to the property which allowed for the expansion of their barrel program. As a result the brewery evolved from Former Future Brewing Company to only serving Black Project Brewing beers. In 2017, Black Project Spontaneous & Wild Ales hopes to produce 250 BBL of beer and increase distribution.
Experience
We arrived on a Saturday afternoon and found just a few other people in the tasting room. The bar is quite unique as it is made from two aluminum airplane wings. The brewing equipment is right off the tasting room visible from the plentiful tables and bar. We enjoyed a flight of all five of the available beers and all were delicious. The meat and cheese board was an unexpected treat and paired beautifully with the beers. Certainly one of my favorites in Denver.
