Council Brewing Co established in 2013 opened their doors in May 2014. Owners Curtis & Liz Chism completely self funded the endeavor starting with selling their house. Both Curtis and Liz were big homebrewers actually winning some awards but as I understand it, Liz is actually the head brewer. They are a nano brewery utilizing a 3 barrel system.
When we arrived, they had about 15 different beers on tap and 6 varieties of their popular Beatitude, the tart Saison series (my favorite citra dry hopped & pineapple). Everything we tried was excellent. I actually caught Liz after she finished adding starter culture to a fresh batch to tell her how impressed I was with their operation. For a fairly new nanobrewery to have such a selection is unbelievable. Not to mention, it is all good! Also greatly enjoyed the Bully Pulpit (IPA) & Sunrise Highway (Sour). As a side note, I was surprised to see they use a plastic fermenter, I have never seen that before. I am excited to see their barrel aged project to start coming of age. As I understand it, a few doors down they have about 80 barrels and three foeders creating magic. Council is definitely one of my favorite breweries in San Diego, all the best of continued success for Curtis & Liz.
