Background – Fort Brewery and Pizza

Entrepreneurs Will Churchill and Corrie Watson took over the Fort Worth Brewery formerly known as Chimera Brewing Co. in February 2018. According to general manager Mike Armstrong, the biggest changes were to the food menu, which now focuses on sandwiches, salads, and pizzas. Fort Brewery and Pizza also hired a new brewer, Jeremy Whitehead, to churn out recipes including a hoppy lager, Kolsch, and India pale ale, among others.

Adam Gonzales and Carlo Galotto opened Chimera in 2010. Originally the brewery was named Zio Carlo Magnolia Brewpub.  In 2015, Gonzales and Galotto rebranded to Chimera Brewing looking for a change.

In 2018, Carlo Galotto approached Churchill looking for a partner. Churchill and Watson had recently been purchasing property in the area.

Experience

Who says you can’t find Sours in Texas.  It appeared a bit slow mid-week but they had 5 of their own beers and 10 guests on tap.  Enjoyed their Fairmountweisse, a nice tart Berliner, the Roman Empire Bitter was a delicious licorice nose and flavored ESB, Make Saison not War, an interesting Hibiscus nose and flavor, and Earthy Sow, very unique truffle nose and farmhouse flavored Saison.  Other wonderful guests. Nice outdoor patio. Ordered two different pizza’s, quite good.  Fun, casual place, would definitely visit again.  Several bottled or canned to go microbrews for sale.
