Background
Co-owners Victor Winquist (brewmaster) & Dale Fountaine opened the 10bbl Old Bisbee Brewing. It was the first brewery in Bisbee since 1891. The tasting room has serving tanks right inside across from the tables. They also have a small building across the street packed with brewing equipment and they can actually pump the beer under the street into the tasting room. The tasting room has a short bar, several tables and up a staircase, an elevated patio overlooking Brewery Gulch. They even have a penthouse for nightly rent over the tasting room.
Victor likes to research old beer recipes and based his Solut! on an 1880’s French recipe. He also researched the previous Bisbee brewer, a Swiss German, and followed his recipe of a Nut Brown Ale to create his Copper City Ale. Whenever possible he likes to incorporate local ingredients such as local, native hops, Sonoran mountain limes, and Sonoran white wheat into his creations.
Experience
We were reminded when driving to Old Bisbee Brewing, Bisbee is very hilly with very narrow roads. We arrived on a Thursday afternoon with a fair amount of people at the brewery. We got a flight to try all the beers they offered. All of the beers were interesting, favorites: Mayan stout on Nitro, Double Hopped IPA & The Copper City Ale. Grilled bratwurst, vegetarian chili and free popcorn are also available.
Besides the penthouse above, there is lodging nearby such as the Bisbee Inn. We strongly urge folks going to Bisbee not to miss Tombstone Brewing in Tombstone.
