Background – SCHLAFLY, The Saint Louis Brewery

Dan Kopman and Tom Schlafly incorporated The Saint Louis Brewery in 1989 . The two obtained a historical building from the 1900’s and began creating a brewery & Tap Room. The brewery produced its first beers under the Schlafly name in 1991. In 1993, the duo expanded to bottling beer by contracting with August Schell Brewing Company in Minnesota allowing them to distribute Schlafly’s around Missouri. The brewery opened “The Schlafly Bottleworks” in 2003, in the St. Louis suburb of Maplewood. With the new facility, the St. Louis Brewery now brews and bottles all the beer sold under the Schlafly brand. Currently, the original Tap Room puts out a very select 2,000 barrels per year some of which make up their cellar series that is only available by bottle. The rest of that production is used to create the Ibex Cellar series also only available by bottle.

Experience

The old brick building contains a large tasting room with many tables and an L shaped bar. The brewing equipment can be seen next to the tasting room through large glass windows. Sixteen beers were available on tap the night we were there. A member of their friendly staff served us  a flight of five beers. We enjoyed The Common, Dry Hopped APA, Coffee Stout, Tasmanian IPA & IPA. We found the beers to be  quite drinkable. The food menu is quite extensive and varietal with salads, sandwiches, four preparations of Mussels and Pub Plates.  We enjoyed the fish special of the day. Friendly staff, comfortable surroundings and pretty good beer make it a worthwhile visit. I would have liked to have tried one of the cellar series bottles.
