Background

Jason Yester from Bristol Brewing, and Todd Walton an experienced taphouse manager opened Trinity Brewing in 2008. Yester has a degree in Microbiology and wrote his thesis on the analyzing the microbes found in bottled beer. This was right in line with his part time job at Bristol Brewing.

Trinity Brewing started with 550-600 barrels of production. To keep up with demand he had to utilize some contract brewers. His focus on Saison’s and Sours was a bit ahead of its time. Over time people developed a taste of Saison’s as well.

In 2012 Yester expanded into a vacant adjacent storefront. This allowed him to increase his bottling capacity tenfold to 55,000 bottles annually. In addition, he was able to increase his barrel operation.

Experience

If you have no reason to go to Colorado Springs or to stop while driving through to Denver you do now.  Trinity Brewing is certainly a destination brewery!  I had heard good things about the group in Sour Beer blogs and was looking forward to checking them out.  They have a nice venue with plenty of room inside with a very cool bar, several tables, a great patio, and many barrels of beer adding to the decor. Always a good sign! Being an IPA and sour beer lover, one of my favorites was their Super Juice Solution; a sour – IPA match made in heaven. The Saison Man was an excellent spicey sour saison brewed with Lactobacillus and Brettanomyces yeast.  Although not on tap, they had great bottles available. Including, their Seven Day Sour, with a big Sour nose and flavor.  Other excellent IPAs included Flo India Pale Ale with a huge piney resin nose and flavor; and Slap Yer Mammy, a big hoppy double IPA that was very smooth.

Trinity also has an interesting selection of food items to go along with the great beers.  We enjoyed a ridiculously good Buffalo Chicken Mac as well as the Jalapeno & Avacado sliders.  Jester is truly one of the great artists of Saison styles of beer. Check these guys out!
